Paneer Power Bowl
Ingredients (Serves 2)
Base:
1 cup white jasmine rice
Protein & Veggies:
200g Mooj Foods’ herb paneer, cubed
1/2 cup edamame (shelled)
1 cup fresh spinach leaves
1 medium red bell pepper, sliced
1 small onion, thinly sliced
2 cloves garlic, minced
Sauce:
2 tablespoons chili oil
2 tablespoons soy sauce
1 tablespoon white vinegar
Toppings:
2 tablespoons roasted peanuts, chopped
Fresh cilantro leaves, chopped (optional)
Sliced green onions (optional)
Instructions
Cook the Rice:
Rinse jasmine rice under cold water until the water runs clear. Cook according to package instructions and set aside.
Prepare the Sauce:
In a small bowl, whisk together chili oil, soy sauce, and white vinegar. Adjust spice and salt to taste.
Cook the Paneer and Veggies:
Heat a non-stick skillet or wok over medium heat. Add a drizzle of oil.
Sauté the garlic and onion until fragrant, about 2 minutes.
Add the bell peppers and cook for another 3-4 minutes, until slightly tender.
Toss in the herb paneer cubes and sauté until golden and slightly crispy on the edges, about 5 minutes. Set aside.
Assemble the Bowl:
In a bowl, layer the cooked jasmine rice as the base.
Arrange the spinach, edamame, and sautéed paneer mixture on top.
Drizzle the prepared sauce over the bowl.
Add Toppings:
Sprinkle with roasted peanuts, cilantro, and green onions for added crunch and freshness.
Serve:
Mix everything together or enjoy each layer separately. Dig in and savor the flavors!
