Paneer Stirfry and Noodles
Ingredients (Serves 2)
For the Noodles:
150g spaghetti or noodles of choice
1 tablespoon sesame oil
For the Stir-Fry:
200g Mooj Foods’ plain paneer, cubed
1 cup broccoli florets
1/2 cup red bell peppers, sliced
1/2 cup carrots, thinly sliced
1/4 cup scallions (green onions), chopped
1 small onion, sliced
2 tablespoons peanuts, crushed
2 tablespoons sesame oil (for stir-frying)
For the Sauce:
2 tablespoons soy sauce
1 tablespoon chili crunch
1 tablespoon rice wine vinegar
1 tablespoon sesame oil
1 tablespoon water (optional, to adjust consistency)
Instructions
Cook the Noodles:
Cook the spaghetti or noodles according to package instructions. Drain and toss with 1 tablespoon sesame oil to prevent sticking. Set aside.
Prepare the Sauce:
In a small bowl, mix soy sauce, chili crunch, rice wine vinegar, sesame oil, and water (if needed). Set aside.
Stir-Fry the Paneer and Vegetables:
Heat 2 tablespoons sesame oil in a large skillet or wok over medium-high heat.
Add the paneer cubes and stir-fry until golden and slightly crispy on the edges, about 5 minutes. Remove and set aside.
In the same skillet, add the onions and stir-fry until translucent, about 2 minutes.
Add the broccoli, bell peppers, and carrots. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
Toss in the scallions and cooked paneer. Stir to combine.
Add the Sauce:
Pour the prepared sauce over the stir-fry. Toss well to coat all the ingredients evenly. Cook for another 2-3 minutes, allowing the flavors to meld.
Combine with Noodles:
Serve the stir-fried paneer and veggies alongside the cooked noodles or mix everything together, depending on your preference.
Garnish and Serve:
Sprinkle crushed peanuts over the top for added crunch. Serve hot and enjoy!
