Ingredients

  • 1 tsp olive oil

  • ¼ cup diced onion

  • ½ bell pepper, diced

  • 75 g (about 2.6 oz, roughly ¼ of a block) MOOJ Taco Paneer, thawed

  • 1 cup fresh spinach, chopped

  • 2 large eggs, beaten

  • Salt and black pepper, to taste

To Prepare

  1. Sauté the vegetables. Heat the olive oil in a nonstick skillet over medium heat. Add the onion and bell pepper and cook 4 to 5 minutes, stirring occasionally, until soft and lightly browned.

  2. Brown the paneer. Crumble or dice the paneer into small pieces and add it to the pan. Cook 2 to 3 minutes, stirring only every minute or so, until it has light golden-brown spots.

  3. Wilt the spinach. Add the spinach and cook 30 to 60 seconds, stirring, until just wilted.

  4. Season. Season lightly with salt and pepper. The Taco Paneer is already seasoned, so taste before adding much salt.

  5. Scramble the eggs. Turn the heat down to medium-low and pour in the beaten eggs. Let them set for about 20 seconds, then gently fold everything together for 1 to 2 minutes until the eggs are cooked through.

  6. Serve. Slide onto a plate and serve right away.

Tips

Make it your own

  • Your favorite vegetables: Mushrooms, cherry tomatoes, zucchini, or jalapeño all work. Add firmer vegetables with the onion and quick-cooking ones with the spinach.

  • Your favorite seasonings: Try a pinch of cumin or smoked paprika, a few dashes of hot sauce, or fresh cilantro on top. A sprinkle of shredded cheese is never a bad idea.

  • Make it a meal: Spoon it into a warm tortilla with salsa and avocado for a breakfast taco, or serve it with toast.

  • Portioning the block: One 10 oz block gives you about four scrambles. Cut it into quarters, use one, and keep the rest refrigerated for the next few mornings.
